Layout by signatures?

Hello, for my mom's birthday I want to print and bind articles form a blog she likes because she finds very difficult to read them on a screen. I'm still defining the idea itself, but I know that I want to divide the posts (around 200 posts of about 2 to 3 pages each) by roughly three or four small volumes a year so it's less overwhelming for her and I can keep on printing the new ones in the future without having to wait for the end of the year. I'd love to have a single file for the whole book to keep page numeration through the whole thing and try out different text layouts, especially now that I'm trying to set the length of each 'issue', and I need to know how long it becomes with each change. For now I simply have the posts in a Google document with heading 2 for each post title and heading 1 for each 'section' that needs to be done in a single book, all spaced by page breaks, but now that I've got every post I need, I'd love to work on a better software.

I have two different problems I'd like to address: -I'd like to have all posts start on an odd numbered page, is there a way to make a page break that automatically skips a page if a header 2 is on a even numbered page? -similarly I need to make the section header (header 1) start not only on an odd page, but also on a section first page, is there any way to automatically menage that kind of operation?

Are there any open source softwares that help manage the layout and print based off of signatures?
