Seasoning comes and goes

Cooked some quality locally made sausages in my little Matfer. Really nice and slow, with a weight on top to get the whole outside casing perfectly crisply, ie, gas station sitting all day on the roller style. They were fantastic.

For care and maintenance I’m going to rub a drop of oil on it. I don’t think it’s down to the bare metal, but just in case.
