New kitten, very shy need advice

Just got this shy girl (Olive) from a cat café where we heard she was really unhappy and scared. She’s 8 months old. So far, we have her set up in the bathroom. She hasn’t come out of her hiding spot behind the toilet for us yet, but she wants us to pet her—she purrs, drools, and pushes into the pets. She also seems to only eat while we’re in there petting her.

She’s been here for 48 hours and has only used the litter box twice. What can we do to help build her confidence? We start our interactions with treats, and she doesn’t seem scared of us or the other cats meowing, but they said she’s been hiding under things for the past few months. Will she come out of this? What can I do to promote her confidence and comfort?
